Ingredients

  • 1/4 cup (40 g) unbleached all-purpose flour
  • 2 tbsp unsalted butter, softened
  • 2 tbsp brown sugar
  • 1 tbsp cocoa powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 1 pinch fleur de sel
  • 1 1/2 cups (225 g) unbleached all-purpose flour
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp ground cardamom
  • 1/4 tsp salt
  • 1/2 cup (115 g) unsalted butter, softened
  • 1 cup (210 g) brown sugar
  • 1 egg
  • 1 cup (250 ml) pumpkin purée
  • 1/2 cup (125 ml) sour cream
  • 5 oz (140 g) 70% dark chocolate or milk chocolate, cut into large pieces (see note)

Instructions

  1. With the rack in the middle position, preheat the oven to 350°F (180°C). Butter a 9 x 5-inch (23 x 13 cm) loaf pan and line with a strip of parchment paper, letting it hang over two sides.
  2. In a bowl, combine all of the ingredients until just moistened. Set aside.
