Chocolate Hazelnut Madeleines
Ingredients
- 4 oz (115 g) 70% dark chocolate, chopped
- 1/2 cup (115 g) unsalted butter
- 3/4 cup (115 g) unbleached all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 3 eggs
- 1/2 cup (105 g) sugar
- 1/2 tsp (2.5 ml) vanilla
- 6 oz (170 g) 70% dark chocolate, melted and cooled
- 1/4 cup (35 g) roasted blanched hazelnuts, chopped
Instructions
- With the rack in the middle position, preheat the oven to 400°F (200°C). Generously butter two 12-cavity madeleine moulds.
- In a bowl set over a pot of boiling water or in the microwave oven, melt the chocolate with the butter. Let cool.
- Meanwhile, in another bowl, combine the flour, baking powder and salt.
- In a third bowl, whisk the eggs and sugar for 2 minutes with an electric mixer. Add the chocolate mixture. Stir in the flour mixture until combined.
- Fill each cavity three-quarters full with batter. Bake for 8 minutes or until puffed up. Unmould onto a wire rack and let cool completely, about 1 hour.
