Chocolate and Caramelized Banana Layered Pudding

Ingredients

  • 1/2 cup (125 ml) sugar
  • 3 tbsp (45 ml) cornstarch
  • 1 tbsp (15 ml) cocoa powder
  • 2 eggs
  • 3 cups (750 ml) milk
  • 8 oz (225 g) chopped dark chocolate
  • 3/4 cup (180 ml) maple syrup
  • 2 tbsp (30 ml) butter
  • 1/2 vanilla bean, halved and scraped
  • 3 cups (750 ml) ripe bananas, peeled and coarsely crushed (4 to 5 bananas)
  • 1 1/2 cups (375 ml) 35% whipping cream
  • 3 tbsp (45 ml) sugar
  • 1/2 tsp (2.5 ml) vanilla extract
  • 60 ginger snap cookies

Instructions

  1. In a saucepan off the heat, combine the sugar, cornstarch and cocoa powder. Whisk in the eggs. Stir in the milk. Bring to a boil over medium heat, scraping the bottom and sides of the saucepan. Simmer over low heat for 1 minute. Remove from the heat.
  2. Add the chocolate. Stir until completely melted and smooth. Pour into a bowl. Cover with plastic wrap directly on the cream. Let cool and refrigerate for 4 hours or until the chocolate pudding has completely chilled.
