- 1/2 cup (125 ml) vegetable oil
- 1 tsp (5 ml) vanilla
- 2 eggs, at room temperature
- 3/4 cup (180 ml) 11% plain yogurt
- 1 cup (180 g) Empire apples, unpeeled, grated (about 2 small apples)
- 4 Empire apples, unpeeled, cored, cut into rounds 1/4 inch (5 mm) thick
- 1/4 cup (55 g) brown sugar
- 2 tbsp butter
- 2 tbsp (30 ml) lemon juice
- 1/2 block (125 g) cream cheese, softened
- 2 tbsp brown sugar
- 1/2 cup (125 ml) 35% whipping cream
Instructions

- In a bowl, combine the flour, baking soda, baking powder, salt and tea.
- In another bowl, whisk the brown sugar, oil and vanilla with an electric mixer. Add the eggs one at a time and mix until smooth. With the machine running on low speed, add the yogurt and dry ingredients. Mix until smooth. Using a spatula, fold in the grated apples. Spread the batter out in the prepared pan.
