Caramelized Peaches with Maple Whipped Cream and Candied Pecans
Peaches, cream and pecans are three basic ingredients that make for a promising dessert. Caramelized peaches are topped with a caramel whipped cream and maple sugared pecans that bring some added crunch. Assemble the dessert as soon as the fruit is done cooking, so that the cream begins to slightly melt on the warm peaches.
Ingredients
- 1/2 cup (125 ml) maple syrup
- 1 1/2 cups (375 ml) 35% whipping cream
- 1 cup (100 g) pecans
- 1/3 cup (75 ml) maple syrup
- 6 ripe but firm peaches, halved and pitted
- 1/2 cup (125 ml) maple syrup
- 2 tbsp unsalted butter
Instructions
- In a pot, bring the maple syrup to a boil. Continue cooking until the syrup starts to caramelize and reduces by half. Remove from the heat.
- Gradually add ½ cup (125 ml) of the 35% cream to the pot. Watch out for splattering. Bring to a boil and cook, stirring, until the caramel is smooth. Remove from the heat. Add the remaining cream and mix well. Pour into a bowl. Cover with plastic wrap directly on the surface of the cream. Let cool. Refrigerate for 6 hours or overnight.
