Caramelized Oat Panna Cotta with Cherries
We improved our basic panna cotta by infusing milk with plenty of maple-caramelized oats. And we added cherries on top!
Ingredients
- 1 cup (100 g) large flake oats
- 1/4 cup (60 ml) maple syrup
- 1 tbsp gelatin
- 1/4 cup (60 ml) water
- 3 cups (750 ml) milk
- 1/2 cup (125 ml) 35% heavy cream
- 1/2 cup (125 ml) maple syrup
- 2 cups (300 g) cherries, pitted and halved
Instructions
- With the rack in the middle position, preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, combine the oats and syrup. Spread on the prepared baking sheet.
- Bake for 8 minutes. Stir well. Continue cooking for 2 more minutes. Set aside 1/2 cup (50 g) of the caramelized oats for the topping.
