Cara Cara Orange and Dark Chocolate Tart
Ingredients
- 1 ¼ cups (175 g) graham cracker crumbs
- ⅓ cup (75 g) unsalted butter, melted
- 1/8 tsp salt
- 2 cara cara oranges or another type of orange
- 10 oz (280 g) 58% dark chocolate, chopped, plus more for serving
- 1 cup (250 ml) 35% cream
- ½ cup (125 ml) milk
- ¼ cup (55 g) sugar
- 3 egg yolks
- 1 pinch Maldon salt or fleur de sel (see note)
Instructions
- With the rack in the middle position, preheat the oven to 350°F (180°C).
- In a bowl, combine all of the ingredients. Press the crust into the bottom and up the sides of a 9-inch (23 cm) tart pan with removeable bottom or glass pie dish. Bake for 15 minutes. Let cool.
