Banana Chocolate Pie

Ingredients

  • 1 cup (250 ml) unbleached all-purpose flour
  • 1 pinch salt
  • 1/2 cup (125 ml) unsalted butter, softened
  • 1/2 cup (125 ml) sugar
  • 1/2 cup (125 ml) cocoa powder
  • 1 egg
  • 1/2 teaspoon (2.5 ml) vanilla extract
  • 3/4 cup (180 ml) 35% cream
  • 3/4 cup (180 ml) mashed bananas
  • 1/4 cup (60 ml) brown sugar
  • 8 oz (225 g) semisweet chocolate
  • 1 egg
  • 1 1/4 cups (310 ml) 35% cream
  • 1/4 cup (60 ml) sugar
  • 1/4 teaspoon (1 ml) vanilla extract
  • Dark chocolate shavings, to taste

Instructions

  1. In a bowl, combine the flour and salt.
  2. In another bowl, cream the butter, the sugar, and cocoa powder in an electric mixer. Add the egg and vanilla and beat until smooth. At low speed or with a wooden spoon, stir in the dry ingredients. Form a disc with the dough. Cover with plastic wrap. Refrigerate for 30 minutes.
  3. On a floured work surface, roll out the pastry and line a 23-cm (9-inch) pie plate with removable bottom.
  4. With the rack in the lowest position, preheat the oven to 200 °C (400 °F). Bake for about 15 minutes or until the crust is thoroughly cooked.
  5. Let cool.
