Banana Cake with Mars Bar Ganache
Ricardo’s recipe: Banana Cake with Mars Bar Ganache
Ingredients
- 1 3/4 cups (430 ml) unbleached all-purpose flour
- 1 1/2 teaspoons (7.5 ml) baking powder
- 1/4 teaspoon (1 ml) baking soda
- 1/4 teaspoon (1 ml) salt
- 2 ripe bananas
- 1/2 cup (125 ml) unsalted butter, softened
- 1/4 cup (60 ml) canola oil
- 1 1/2 cups (375 ml) sugar
- 1/2 teaspoon (2.5 ml) vanilla extract
- 2 eggs
- 3/4 cup (180 ml) milk
- 3 bars 58 g Mars, diced
- 1/3 cup (75 ml) 35% cream
Instructions
- With the rack in the middle position, preheat the oven to 180 °C (350 °F). Butter a 20-cm (8-inch) in diameter springform pan. Line the bottom with parchment paper.
- In a bowl, combine the flour, baking powder, baking soda and salt. Set aside.
- In a plate, using a fork, mash the bananas until smooth. Set aside.
- In another bowl, cream the butter with the oil, sugar, and vanilla with an electric mixer. Add the eggs, one at a time and beat until incorporated. At low speed, add the dry ingredients alternately with the milk and bananas. Spread in the pan. Bake for about 1 hour and 15 minutes or until a toothpick inserted in the centre of the cake comes out clean. Let cool. Unmould and cool completely on a rack.
