Apple Pie Squares

For ooey-gooey squares, choose an apple that cooks down, like the crunchy Spartan. We prebaked the crust to help seal in all those apple juices, and then sprinkled oats on top to give the cinnamon-infused treat a crumbly finish.

Ingredients

  • 1/2 cup (115 g) semi-salted butter, softened
  • 1/2 cup (105 g) lightly packed brown sugar
  • 1 1/2 cups (225 g) unbleached all-purpose flour
  • 1/2 cup (50 g) quick oats
  • 2 tbsp semi-salted butter, softened
  • 1/4 cup (55 g) lightly packed brown sugar
  • 2 tbsp cornstarch
  • 1/4 tsp ground cinnamon
  • 4 cups (500 g) peeled, halved, cored and thinly sliced Spartan apples

Instructions

  1. With the rack in the middle position, preheat the oven to 350°F (180°C). Butter a square 8-inch (20 cm) baking dish and line with parchment paper, letting it hang over two sides.
  2. In a bowl, cream the butter and brown sugar. Stir in the flour until crumbly. Set aside 1/2 cup of the dough for the filling. Press the remaining dough into the bottom of the baking dish. Bake for 10 minutes.
