Apple and Pear Puff Pastry Tart

Ingredients

  • 200 g store-bought puff pastry, thawed and cold
  • 2 tbsp (30 ml) milk
  • 1 tbsp sugar
  • 3 red pears, halved and seeded
  • Lemon juice, for sprinkling
  • 1 cup (250 ml) pink applesauce
  • 1/4 cup (60 ml) warm apricot jam

Instructions

  1. With the rack in the lowest position, preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
  2. On a lightly floured work surface, roll out the puff pastry to a 9-inch (23-cm) square. Using a knife, carefully cut a 1/2-inch (1 cm) strip of dough along the outside edge of the square. Place the square of dough on the baking sheet.
  3. Brush along the edges of the square with milk and stick the strip of dough on top of it. Brush the top of the strip with milk and sprinkle with sugar. Set aside.
  4. Sprinkle the lemon juice into a bowl of water. On another work surface, cut the pear halves very thinly and soak in the lemon water.
  5. Spread the applesauce over the dough without touching the border. Place the pears on the applesauce with the slices slightly overlapping each other.
  6. Bake for 25 minutes. Remove the tart from the oven and brush with warm apricot jam. Let cool for 15 minutes. Serve warm or cold.
