Cream of Chickpea Soup with Garlic Chips and Curry Maple Syrup

Chickpeas have the same comforting power as yellow peas in this popular pea soup. However, this preparation is made much simpler thanks to canned legumes, which soak up the flavours of the curry powder, ground coriander and Jamaican pepper. Add Brussels sprouts leaves and roasted chickpeas as a topping, along with garlic chips. A drizzle of maple syrup intensifies the soup’s flavour.

Maple-Rosemary Cocktail

There’s no need to wait for dessert to eat some maple taffy on snow; you can enjoy some during cocktail hour. In this drink, you’ll note the freshness of the white apple vermouth and the resinous aromas of the gin and rosemary. You’ll also find the latter in the sugar, which is used to coat the rim of your glass to give it a frosted look. Fill your glass with crushed ice and add a stick of taffy to it.

Maple Sticky Buns

These light sticky buns with a hint of cinnamon and a maple butter glaze are pure bliss! To achieve the ultra-soft dough, you must knead it for 15 minutes. It may seem like a long time, but it makes all the difference. In addition to the glaze, enhance the maple flavour by drizzling some warm syrup over the buns once they come out of the oven.

Giant Maple Ham Sandwich with Sesame Coleslaw

To make this giant sandwich, take a whole baguette and fill it with our maple and ginger-braised ham, then top with an Asian-inspired slaw with sesame and roasted peanuts. It’s a sandwich made for sharing for your next gathering with family or friends.

Chicken, Potato and Pea Curry

This creamy chicken curry is seasoned with a mix of garam masala, curry powder and fresh cilantro. We opted for chicken thighs, which remain tender even after simmering in the sauce. A comforting dish that will warm both body and soul.

Guacamole with Charred Tomatillo Salsa

Elevate your usual guacamole by garnishing it with a tomatillo-based salsa. Grill the tomatillos with onions and pepper until they’ve blackened, then blend with cilantro for a fresh salsa. Place the salsa on the avocado purée and tie the whole thing together with a bit of Greek yogurt spread at the very centre.

Smashed Potato Nachos

In this nacho-inspired dish, replace the corn chips with crispy smashed potatoes. Top with grated cheese, salsa and a few dollops of plain Greek yogurt for a starter that’ll bring everyone to the table.

Spinach and Bacon Salad with Maple Dressing

This gourmet salad is made with endives, radicchio, crisp apple slices and finely chopped celery. It’s dressed with a maple-miso vinaigrette, which has a delightful sweet and umami combination. The salad is then sprinkled with large pieces of caramelized bacon seasoned with coriander seed, pepper and aniseed.

Cheddar Soufflé Omelette with Maple Popcorn

Omelette soufflé is a must-have at sugar shack meals. In this recipe, we wanted to give it a more indulgent twist. First, whisk the eggs with maple syrup, then add cheddar cheese while the omelette cooks in the skillet, before it goes in the oven. Once baked, garnish with a vinegar-dressed herb salad and, for a final touch, top with maple popcorn. Surprising yet delicious.

Fruit Sando (Japanese Mango Sandwiches)

This dessert is a classic Japanese street food that’s often eaten as a snack. It’s usually made with two slices of shokupan, a sweet and soft milk bread. In this recipe, we removed the crusts from slices of white bread and then filled them with whipped cream and mango. The sandwiches are then refrigerated before slicing, which reveals the beautiful pieces of the tropical fruit.
