Melted Cheese Spread

With a few simple ingredients, you can reproduce this famous store-bought melted cheese spread at home, in collaboration with La Famille du lait. Mix together milk, cornstarch and Quebec cheddar and cream cheese, for a mega creamy spread. Considerably more delicious than the commercial version.

Ingredients

  • 1 cup (250 ml) milk
  • 1 tbsp cornstarch
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp sweet paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp turmeric
  • 2 cups (200 g) marbled cheddar cheese, grated
  • 1/2 block (125 g) cream cheese, softened and cubed

Instructions

  1. In a pot off the heat, whisk together the milk, cornstarch, sugar, salt and spices.
  2. Bring to a boil over medium heat, stirring constantly and scraping the bottom and sides of the pot. Simmer for 1 minute. Remove from the heat.
  3. Add both cheeses to the pot and whisk until melted. Reheat over low heat as needed, without letting the mixture boil.
  4. Pour into an airtight container. Cover and refrigerate for at least 3 hours. Spread it on crackers or serve as a dip with vegetables or breadsticks. Stir well before serving. The spread will keep for 1 week in the refrigerator.
