Ingredients

  • ¼ cup (60 ml) low-sodium soy sauce
  • ¼ cup (60 ml) vegetable oil
  • 2 tbsp (30 ml) lime juice
  • 1 tbsp brown sugar
  • 4 Lebanese cucumbers, halved lengthwise, then cut into ¼-inch (5 mm) slices on an angle
  • 1 romaine lettuce, torn
  • ½ lb (225 g) green beans, trimmed and blanched
  • ½ cup (75 g) roasted salted peanuts, chopped
  • ½ cup (45 g) unsweetened or sweetened grated coconut, toasted
  • ⅓ cup (50 g) roasted black and white sesame seeds
  • ⅓ cup (20 g) store-bought fried onions (see note)

Instructions

  1. In a large bowl, whisk together the soy sauce, oil, lime juice and brown sugar until the sugar has dissolved.
  2. Add the remaining ingredients to the bowl and mix well. Season with salt as needed. Transfer the salad to a large serving dish. Serve immediately.
