BLT Potato Salad

Ingredients

  • 4 cups (800 g) mixed colour baby potatoes
  • 8 bacon slices, thinly sliced
  • 1 heart romaine lettuce, shredded
  • 1 large tomato, seeded and cut into wedges 

  • 1/2 cup (35 g) freshly grated Parmesan cheese
  • Salt and pepper
  • 1/3 cup (75 ml) mayonnaise
  • 2 tbsp (30 ml) milk
  • 2 tbsp (30 ml) fresh chives, chopped
  • 1 garlic clove, finely chopped

Instructions

  1. Place the potatoes in a pot. Cover with water. Season with salt. Bring to a boil and simmer until the potatoes are tender. In a large pot of salted water, cook the potatoes until tender. Drain and plunge into ice water. Drain again. Cut into wedges. Set aside.
  2. Meanwhile, in a skillet over medium-high heat, cook the bacon until crisp. Drain on paper towels. Set aside.
