Cherry Trifle (Zuppa Inglese Con Ciliegie)

Ingredients

  • ½ cup (125 ml) Passito, port or muscat wine
  • ½ cup (125 ml) orange juice
  • ½ cup (105 g) sugar
  • 1 cinnamon stick
  • 1 star anise
  • 2 cups (300 g) fresh or frozen cherries, pitted and halved
  • ¼ cup (55 g) sugar
  • 2 tsp corn starch
  • 2 eggs
  • ½ cup (125 ml) Passito, port or muscat wine
  • 1 container (250 g) mascarpone cheese
  • 1 cup (250 ml) 35% whipping cream
  • 7 oz (200 g) amaretti cookies, broken into pieces
  • ½ cup (55 g) slivered almonds, roasted
  • ½ cup (15 g) dark chocolate shavings

Instructions

  1. In a pot, bring the alcohol, juice, sugar and spices to a boil. Simmer until the mixture is syrupy, about 10 minutes. Add the cherries and simmer for another 2 minutes. Transfer into a bowl and cool completely. Compost the cinnamon stick and star anise. Set the syrup aside.
