Cherry Trifle (Zuppa Inglese Con Ciliegie)
Ingredients
- ½ cup (125 ml) Passito, port or muscat wine
- ½ cup (125 ml) orange juice
- ½ cup (105 g) sugar
- 1 cinnamon stick
- 1 star anise
- 2 cups (300 g) fresh or frozen cherries, pitted and halved
- ¼ cup (55 g) sugar
- 2 tsp corn starch
- 2 eggs
- ½ cup (125 ml) Passito, port or muscat wine
- 1 container (250 g) mascarpone cheese
- 1 cup (250 ml) 35% whipping cream
- 7 oz (200 g) amaretti cookies, broken into pieces
- ½ cup (55 g) slivered almonds, roasted
- ½ cup (15 g) dark chocolate shavings
Instructions
- In a pot, bring the alcohol, juice, sugar and spices to a boil. Simmer until the mixture is syrupy, about 10 minutes. Add the cherries and simmer for another 2 minutes. Transfer into a bowl and cool completely. Compost the cinnamon stick and star anise. Set the syrup aside.
