Banana Cream Pie
Ingredients
- 1 1/4 cups (310 ml) graham cracker crumbs
- 1/4 cup (60 ml) unsalted butter, melted
- 2 tablespoons (30 ml) sugar
- 3/4 cup (180 ml) sugar
- 2 tablespoons (30 ml) cornstarch
- 2 tablespoons (30 ml) unbleached all-purpose flour
- 1/2 cup (125 ml) 35% cream
- 3 egg yolks
- 2 1/4 cups (560 ml) milk, warm
- 2 tablespoons (30 ml) unsalted butter
- 1 teaspoon (5 ml) vanilla extract
- 1 cup (250 ml) 35% cream
- 3 tablespoons (45ml) sugar
- 2 to 3 ripe, but firm bananas, sliced
Instructions
- With the rack in the middle position, preheat the oven to 180 °C (350 °F).
- In a bowl, combine all ingredients. Press mixture into the bottom and sides of a 23-cm (9-inch) pie plate. Bake for about 12 minutes or until crust is golden brown. Let cool.
