Warm Cheesy Toasts
Ingredients
- 2 garlic cloves, chopped
- 3 tbsp (45 ml) olive oil
- 9 cups (225 g) baby spinach
- 4 slices country bread
- 1/4 cup (60 ml) labneh
- 2 mild Italian or Toulouse sausages, cooked and sliced into rounds
- 7 oz (200 g) raclette cheese
Instructions
- With the rack in the highest position, preheat the oven to broil.
- In a non-stick skillet over medium-high heat, soften the garlic in half of the oil. Add the spinach and cook, stirring, until just wilted. Season with salt and pepper. Press into a sieve to drain well.
- Place the bread on a non-stick or foil-lined baking sheet and brush with the remaining oil. Turn the bread slices over and spread with labneh. Layer with spinach and sausages. Cover with cheese.
- Broil for about 5 minutes or until the cheese is melted and the bread begins to toast.
