Smoky BBQ Sauce (Kentucky)
Ingredients
- 1 onion, finely chopped
- 1/4 cup (60 ml) butter
- 2 cloves garlic, finely chopped
- 1 tablespoon (15 ml) paprika
- 1/4 cup (60 ml) bourbon or whiskey
- 1/4 cup (60 ml) molasses
- 1/4 cup (60 ml) lemon juice
- 1/2 cup (125 ml) ketchup
- 1 cup (250 ml) tomato sauce
- 1 teaspoon (5 ml) chipotle Tabasco, or to taste
- Salt and pepper
Instructions
- In a saucepan, brown the onion in the butter. Season with salt and pepper. Add the garlic and paprika and cook for 1 minute. Deglaze with the bourbon.
- Add the remaining ingredients and bring to a boil. Simmer for about 15 minutes or until the sauce is syrupy. Stir frequently. Adjust the seasoning. If desired, purée the sauce until smooth in a blender.
- Serve with spit-roasted pork, pork chops or tenderloin, or in a hamburger.
