Chutney-Glazed Pork Tenderloin
Ingredients
- 2 pork tenderloins
- 2 tablespoons (30 ml) butter
- 1 tablespoon (15 ml) vegetable oil
- 1 cup (250 ml) homemade or store-bought chutney (see recipe Mango Chutney)
- 1 cup (250 ml) orange juice
- 1 clove garlic, finely chopped
- 1 sprig rosemary
- Salt and pepper
Instructions
- Preheat the oven to 180 °C (350 °F).
- Dust the tenderloins with flour. In a saucepan, sear them in the butter and oil.
- Add the remaining ingredients and bring to a boil.
- Bake for about 20 minutes for medium rare.
- Slice the tenderloins and serve with good mashed potatoes or sweet potatoes.
