Mussels with Tomato and Thyme

Ingredients

  • 3 shallots, chopped
  • 1/4 cup (55 g) butter
  • 1/2 cup (125 ml) red wine
  • 1 can (14 oz/398 ml) crushed plum tomatoes
  • 1/2 tsp dried thyme
  • 4 lb (2 kg) mussels, washed and trimmed

Instructions

  1. In a large saucepan over medium heat, soften the shallots in the butter. Add the wine and let reduce for 1 minute. Add the tomatoes and thyme. Season with salt and pepper. Bring to a boil. Add the mussels. Cover and simmer until the mussels have opened, about 4 to 5 minutes. Discard any mussels that haven’t opened.
  2. Serve with a green salad and French fries, if desired.
