Smashed Cucumber and Sesame Salad

With its soy sauce, rice vinegar and ginger dressing, this cucumber salad is the perfect side dish to any Asian-inspired recipe. It’s a refreshing salad that can be enjoyed in summer or any time of year.

Ingredients

  • 2 English cucumbers, unpeeled, seeded and quartered lengthwise
  • 1 tsp salt
  • 3 tbsp (45 ml) rice vinegar
  • 2 tbsp (30 ml) low-sodium soy sauce
  • 1 tbsp sugar
  • 1 tsp fresh ginger, grated
  • 3 radishes, thinly sliced on a mandoline
  • 2 green onions, thinly sliced
  • 2 tbsp roasted white and black sesame seeds

Instructions

  1. On a work surface, firmly crush 2 cucumber pieces at a time with the bottom of a small pot. Cut into pieces 1 ¼ inches (3 cm) long and place in a large bowl. Add the salt and mix well. Let marinate for 10 minutes. Drain and return to the same bowl.
  2. Meanwhile, in another bowl, combine the vinegar, soy sauce, sugar and ginger until the sugar has dissolved. Pour the dressing over the cucumbers. Add the radishes, green onions and mix well. Adjust the seasoning.
  3. Transfer the salad to a large serving dish. Sprinkle with sesame seeds.
