Flavoured butters for steamed lobster
Ingredients
- 1/2 cup (125 ml) semi-salted butter
- Grated zest of 1 lemon
- Flesh of 1 lemon, pith removed, finely diced
- Juice of 1 lemon
- 1 tablespoon (15 ml) chopped flat-leaf parsley
- 2 teaspoons (10 ml) chopped capers
- Freshly ground pepper
- 1/2 cup (125 ml) semi-salted butter, softened
- 2 tablespoons (30 ml) sushi pickled ginger (gari), drained and chopped
- Grated zest of 1 lime
- Juice of 1 lime
- 2 shallots, chopped
- 1/2 cup (125 ml) semi-salted butter
- 2 tablespoons (30 ml) white wine vinegar
- 1/4 cup (60 ml) white wine
- 2 teaspoons (10 ml) chopped fresh tarragon
- Freshly ground pepper
- 1/2 cup (125 ml) semi-salted butter
- 1/4 cup (60 ml) lemon or lime juice (or to taste)
Instructions
- In a small saucepan, heat the butter slowly until it begins to turn golden. Strain into a bowl and add the remaining ingredients. Stir to combine. Season with pepper.
