Djon Djon Rice
Ingredients
- 1 cup (250 ml) dried djon djon mushrooms
- 4 cups (1 litre) boiling water
- 1 small onion, finely chopped
- 2 cloves garlic, finely chopped
- 1 tablespoon (15 ml) vegetable oil
- 2 cups (500 ml) long grain rice
Instructions
- Soak the mushrooms in boiling hot water for about 10 minutes. Strain and set the soaking water aside. Discard the mushrooms.
- In a saucepan, gently brown the onion and garlic in the oil. Season with salt and pepper. Add the reserved water and rice. Bring to a boil. Cover and cook over low heat for about 20 minutes or until the rice is tender.
- Serve with Seventh Heaven Rabbit.
