Tuna Tartare With Avocado and Wasabi Mousseline
Ingredients
- 1 ripe avocado
- 1 tbsp (15 ml) lime juice
- 1/2 tsp (2.5 ml) wasabi, or to taste
- 1 green onion, finely chopped
- 1 tbsp (15 ml) lime juice
- 1 tbsp (15 ml) soy sauce
- 1 tsp (5 ml) olive oil, plus more for serving
- 1/2 tsp (2.5 ml) toasted sesame oil
- 1/2 tsp (2.5 ml) wasabi, or to taste
- 1 lb (454 g) very fresh bluefin tuna, finely chopped with a knife
- 2 tsp toasted sesame seeds and/or black sesame seeds
- 1/2 lime, zest finely grated
- 1/2 cup (15 g) baby arugula
- 4 long baguette slices, toasted
Instructions
- In a small food processor, purée the avocado with the lime juice and wasabi paste. Season with salt. Cover and refrigerate until ready to serve.
