Maple Pork Chops with Buttered Broccoli Stalks
Ingredients
- 4 bone-in pork chops, 3/4-inch (2 cm) thick
- 1 tbsp (15 ml) olive oil
- 3 tbsp butter
- 1/2 onion, finely chopped
- 2 tsp unbleached all-purpose flour
- 1/3 cup (75 ml) Sortilege-style maple whiskey
- 1 cup (250 ml) chicken broth
- 1 tsp (5 ml) Worcestershire sauce
- 1/4 cup (60 ml) 35% or 15% cream
- 4 cups (380 g) broccoli stalks, peeled, cut into strips and blanched
- 2 tbsp butter
Instructions
- In a large skillet over medium heat, brown the pork chops in the oil and 1 tbsp of butter for 3 minutes per side. Season with salt and pepper. Transfer to a plate and set aside. Clean the skillet.
- Meanwhile, in a saucepan, soften the onion in the remaining butter until translucent. Sprinkle with the flour and cook for 1 minute, while stirring. Add the whiskey. Stir and cook for 2 minutes. Add the remaining ingredients and bring to a boil over medium heat, stirring constantly. Let reduce by a little more than half, about 5 minutes
