Croissants French Toast with Blueberry Sauce
Ingredients
- 3 cups (750 ml) blueberries, fresh or frozen
- 1/4 cup (60 ml) water
- 1/2 cup (125 ml) sugar
- 1 teaspoon (5 ml) fresh ginger, grated (optional)
- 3 eggs, lightly beaten
- 1/4 cup (60 ml) milk
- 1/4 cup (60 ml) maple syrup
- A pinch of salt
- 4 stale croissants
- 2 tablespoons (30 ml) butter
Instructions
- In a saucepan, combine 500 ml (2 cups) of blueberries, the water, sugar and ginger. Bring to a boil and simmer over medium heat for 8 minutes. Pour into a blender and purée until smooth. Add the remaining blueberries and let cool.
