Spinach Citrus and Avocado Salad
Ingredients
- 1 pink grapefruit
- 1 white grapefruit
- 1 navel orange
- 1 avocado
- 6 cups (1.5 litres) baby spinach
- 1 tablespoon (15 ml) white sesame seeds
- 1 tablespoon (15 ml) black sesame seeds
- 1/4 cup (60 ml) juice from the citrus
- 2 teaspoons (10 ml) white wine vinegar
- 1 tablespoon (15 ml) soy sauce
- 1/2 cup (125 ml) sunflower oil
- Salt and pepper
Instructions
- Supreme the citrus by removing the skin, pith and membrane and divide into skinless sections. Work over a bowl to collect the juice.
- With a knife, cut the avocado in half all around the pit. Hold both side of the avocado with your hands and twist the two halves in opposite directions so that they detach from the pit. Peel and slice the avocado on the diagonal. Gently toss the avocado with the citrus fruit to prevent browning.
- In a bowl, whisk together the vinaigrette ingredients.
- Spread the spinach on a large plate. Scatter the avocado and citrus on the spinach. Drizzle with the vinaigrette and sprinkle with sesame seeds.
