Ингредиенты

  • 4 medium sweet potatoes, peeled and cut into sticks 1/4 inch (1/2 cm) thick
  • Canola oil for frying
  • 3/4 cup (180 ml) potato starch
  • Salt and pepper

Инструкция

  1. Preheat the oil, setting the fryer to high.
  2. Drop the sweet potato sticks into warm water and soak for at least 5 minutes. Drain well without letting them dry completely.
  3. Scatter the sweet potato sticks on a baking sheet and dust with potato starch. Toss.
  4. Fry the sticks in 2 batches, until pale gold and crisp, 4 to 5 minutes.
  5. Remove from the oil and drain on paper towels. Season with salt.
