Three-Cheese Chicken Lasagna
Ingredients
- 9 lasagna noodles
- 1 cauliflower, cut into florets
- 1/4 cup (60 ml) chicken broth, approximately
- 2 tbsp butter
- 2 tbsp flour
- 1 1/2 cups (375 ml) milk
- 1 container 275 g mascarpone cheese
- 1/2 cup (35 g) Parmesan cheese, freshly grated
- 3 skinless and boneless chicken breast halves, cut into 1/2-inch (1-cm) thick strips
- 2 tbsp (30 ml) olive oil
- 8 oz (227 g) white mushrooms, thinly sliced
- 1 leek (white part only), thinly sliced
- 6 oz (170 g) fresh spinach, chopped
- 2 cups (200 g) Emmental cheese, grated
Instructions
- In a large pot of boiling salted water, cook the pasta until al dente. Drain, leaving the water in the pot. Rinse under cold water and oil lightly. Set aside.
