Pink Grapefruit Meringue Pie

Ingredients

  • 1 1/3 cups (325 ml) graham cracker crumbs
  • 1/4 cup (60 ml) sugar
  • 1/3 cup (75 ml) unsalted butter, melted
  • 2 teaspoons (10 ml) powdered gelatin
  • 2 tablespoons (30 ml) cold water
  • 2 tablespoons (30 ml) cornstarch
  • 1/2 cup (125 ml) orange juice
  • 1/2 cup (125 ml) sugar
  • 1 1/2 cups (375 ml) freshly squeezed grapefruit juice (keep the pulp)
  • 1 pink grapefruit, cut into skinless segments
  • 4 egg whites
  • 1/2 teaspoon (2.5 ml) cream of tartar
  • 1/2 cup (125 ml) sugar

Instructions

  1. With the rack in the middle position, preheat the oven to 190 °C (375 °F).
  2. In a bowl, combine all the ingredients. Lightly press into 23-cm (9-inch) pie plate. Bake for about 8 minutes and let cool.
