Glazed Lamb and Apple Skewers
Ingredients
- 1/2 cup (125 ml) balsamic vinegar
- 2 tablespoons (30 ml) whole-grain mustard
- 2 tablespoons (30 ml) brown sugar
- Salt and pepper
- 1 1/2 lbs (675 g) boneless leg of lamb, cut into thirty-two 1-inch (2.5-cm) cubes
- 2 Cortland apples, cut into twenty-four 1-inch (2.5-cm) cubes
- Salt and pepper
- 8 wooden skewers, soaked in water for 30 minutes
- 1/2 teaspoon (2.5 ml) fresh rosemary, chopped
Instructions
- In a saucepan, combine all the ingredients. Over medium heat, bring to boil, stirring frequently. Reduce by half over low heat for about 15 minutes. Season with salt and pepper. Set aside.
- Preheat the grill to high temperature.
