Healthy Spaghettini Carbonara

Ingredients

  • 1/2 cup (125 ml) milk
  • 2 eggs
  • 1 cup (250 ml) freshly grated Parmesan cheese
  • 4 green onions, thinly sliced
  • 6 slices Black Forest ham, cut into strips
  • 1 tablespoon (15 ml) olive oil
  • 1 tablespoon (15 ml) all-purpose flour
  • 3/4 lb (375 g) spaghettini, cooked and kept warm
  • Salt and pepper

Instructions

  1. In a bowl, beat together the milk, eggs, and Parmesan cheese. Set aside.
  2. In a saucepan, sauté the green onions and ham in the oil until the onions begin to brown. Add the flour and stir to combine.
  3. Over low heat, stir in the egg mixture. Stir until
  4. the cheese has melted. Do not overcook.
  5. Add the pasta and season with salt and pepper. Toss and serve.
