Spinach and Goat Cheese Crostini
Ingredients
- 16 slices baguette
- 1 garlic clove, finely chopped
- 2 tbsp butter
- 1 cup (250 ml) 35% or 15% cream
- 1 pinch ground nutmeg
- 12 cups (300 g) baby spinach
- 1 log (125 g) goat cheese, cut into 16 slices
Instructions
- With the rack in the top position, preheat the broiler.
- Place the baguette slices on a baking sheet and toast in the oven.
- In a skillet over medium heat, soften the garlic in the butter. Add the cream and nutmeg. Reduce until there’s a little over half the cream remaining.. Add the spinach and continue cooking until the cream has thickened. Season with salt and pepper.
- Spread the spinach mixture on the toasts and garnish with a slice of goat cheese. Broil until the cheese is melted.
