Island Lobster Newburg
Ingredients
- 4 live lobsters, about 1 lb (454 g) each
- 1/4 cup (60 ml) butter
- 2 tablespoons (30 ml) flour
- 1 1/4 cups (310 ml) milk
- 1/4 cup (60 ml) 35% cream
- 1/4 cup (60 ml) chopped flat-leaf parsley
- 1/2 teaspoon (2.5 ml) paprika
- 1 pinch ground nutmeg
- 1/4 cup (60 ml) dry sherry
- White port
- Salt and pepper
- 1/2 lb (225 g) mushrooms, cut into quarters
- 2 tablespoons (30 ml) butter
- 2 tablespoons (30 ml) chopped fresh chives
- Zest of 1/2 lemon
- Salt and pepper
Instructions
- Place water in a large stockpot or Dutch oven to a depth of about 2.5 cm (1 inch). Salt generously and bring to a boil. Place the lobsters in the boiling water. Cover and steam for about 9 minutes, counting from when the water returns to a boil.Meanwhile, start making the sauce.
