Pasta with Rosée Sauce

Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, finely chopped
  • 2 tbsp (30 ml) olive oil
  • 1 can (28 oz/796 ml) crushed or whole plum tomatoes
  • 3 tbsp (45 ml) tomato paste
  • Salt and pepper
  • 2 tbsp butter
  • 2 tbsp unbleached all-purpose flour
  • 1 cup (250 ml) milk
  • 3/4 lb (340 g) long or short pasta of your choice

Instructions

  1. In a pot over medium heat, soften the onion and garlic in the oil for 3 minutes. Add tomatoes and tomato paste and stir to combine. Bring to a boil and simmer for 15 minutes, stirring frequently. Season with salt and pepper.
  2. In a blender, purée the sauce until smooth. Return to the pot and keep warm.
