Translucent Dim Sum Dough
Ingredients
- 1 cup (110 g) wheat starch
- 1/2 tsp salt
- 1 cup (250 ml) boiling water (see note)
- 1 tbsp (15 ml) vegetable shortening
Instructions
- In a bowl, combine the wheat starch and salt. Add the boiling water and stir thoroughly with a wooden spoon until dough forms. Add the vegetable shortening and knead with your hands until smooth, about 1 to 2 minutes.
- On a work surface, shape half of the dough at a time into a cylinder 1-inch (2.5-cm) in diameter. Sprinkle with wheat starch, as needed. Cut the cylinder into 3/4-inch (2-cm) pieces. Shape the pieces into balls.
- Using the back of a lightly oiled spatula, flatten each ball into a very thin disc, about 2 ½ inches (6 cm) in diameter. Stuff immediately. If you don’t have a spatula, roll out the dough with a rolling pin. Repeat the process with the remaining dough and filling. Note: This dough should be worked with while it is warm, so the filling should be prepared before the dough is made.
