Greek Yogurt with Caramelized Peanut Granola Clusters and Berries
Ingredients
- 1/4 cup (60 ml) vegetable oil
- 1/4 cup (60 ml) molasses
- 1/4 cup (55 g) brown sugar
- 1 egg white
- 3 cups (300 g) large-flake oats
- 1 cup (150 g) roasted salted peanuts
- 2 cups (270 g) mixed fresh berries (such as blueberries, blackberries, raspberries)
- 6 tbsp (90 ml) raspberry or mixed berry jam
- 2 cups (500 ml) 0% plain Greek yogurt (see note)
Instructions
- With the rack in the middle position, preheat the oven to 350°F (180°C). Line a baking sheet with a silicone mat or parchment paper.
- In a large bowl, whisk together the oil, molasses, brown sugar and egg white. Add the oats and peanuts. Mix to coat the oats well. Spread out on the baking sheet.
- Bake for 15 minutes. Gently flip the granola over. Bake for another 5 to 10 minutes or until the granola is caramelized. Let cool completely, about 1 hour. The granola should clump together in pieces of varying sizes. Break the larger pieces, as needed. The granola will keep for 1 month in an airtight container at room temperature.
