Frittata with Chips and Caramelized Onions
Ingredients
- 2 onions, thinly sliced
- 2 tbsp butter
- 8 eggs
- 3 cups (120 g) plain chips, coarsely crushed (see note)
- 1/3 cup (75 ml) sour cream
- 2 tbsp chives, finely chopped
Instructions
- With the rack in the middle position, preheat the oven to 350°F (180°C).
- In a 9-inch (23 cm) non-stick skillet over medium heat, brown the onions in the butter, stirring almost continuously, until nicely browned, about 10 to 15 minutes. Season with salt and pepper. Spread the onions out in an even layer along the bottom of the skillet.
- Meanwhile, in a bowl, whisk the eggs. Season with salt and pepper. Add the chips and let soak for 5 minutes.
- Pour the egg mixture over the onions and tilt the skillet slightly to spread the eggs into an even layer. Cook for 2 minutes. Transfer to the oven and bake for 10 minutes or until the frittata is cooked through.
- Using a spatula, cut the frittata into wedges. Garnish with the sour cream and sprinkle with the chives. Serve with green salad, if desired.
