Oven-Baked Apple Turnovers
Ingredients
- 1/4 cup (55 g) sugar
- 1 1/2 tsp cornstarch
- 1/4 tsp ground cinnamon
- 1 Cortland apple, peeled, cored and cut into small dice
- 1 McIntosh apple, peeled, cored and cut into small dice
- 2 tbsp (30 ml) lemon juice
- 1 1/2 cups (225 g) unbleached all-purpose flour
- 2 tbsp sugar
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup (115 g) cold unsalted butter, diced
- 3 tbsp (45 ml) cold milk
- 2 eggs
- 1/2 cup (65 g) icing sugar
- 2 tsp (10 ml) water
- 1/2 tsp (2.5 ml) vanilla
Instructions
- In a small pot off the heat, combine the sugar, cornstarch and cinnamon. Add the apples and lemon juice. Bring to a boil over medium heat while stirring. Cover and cook over low heat just until the apples are tender, about 10 minutes. Transfer into a bowl and let cool. Cover and refrigerate until completely chilled.
