Pork Chop with Cherry Tomatoes
This pork chop recipe for one is perfect for a weeknight supper. Marinating the meat for a few minutes in lemon, oregano and olive oil makes it tender and juicy. And pan-frying it with cherry tomatoes and zucchini boosts the flavour of the pork. An appetizing dish that you can put together in a flash.
Ingredients
- 1 bone-in or boneless pork chop, ¾ inch (2 cm) thick
- 1/2 lemon, cut into wedges
- 1 tsp dried oregano
- 2 tbsp (30 ml) olive oil
- 1 small zucchini, cubed
- 1/2 small red onion, cut into wedges
- 1/2 cup (70 g) cherry tomatoes, halved
- Tzatziki sauce, to taste (see note)
Instructions
- On a plate, drizzle the pork chop with some of the lemon juice on both sides. Sprinkle with the oregano. Season with salt and pepper. Let marinate for 5 minutes. Using a pastry brush, lightly oil the meat.
- In a large skillet over medium-high heat, brown the pork chop in the oil for 4 minutes (see note). Flip the pork chop over. Add the zucchini and onion. Continue to cook for 4 minutes, stirring the vegetables a few times. Add more oil as needed. Place the meat on a plate and let rest for 5 minutes.
- Add the tomatoes to the skillet of vegetables. Continue to cook the vegetables until the zucchini is tender and the tomatoes release their juice, about 4 minutes. Season with salt and pepper.
- Serve the pork chop and vegetables on a plate. Serve with tzatziki and a lemon wedge.
