Ingredients

  • 1 tbsp butter
  • 1 tbsp unbleached all-purpose flour
  • 1 cup (250 ml) milk
  • 1 cup (100 g) sharp cheddar cheese, grated
  • 1 egg yolk
  • 1 pinch ground nutmeg
  • 4 slices square brioche bread
  • 5 oz (170 g) porchetta or white ham, thinly sliced
  • 1 lb (450 g) asparagus, trimmed and blanched
  • 1 ¼ cups (125 g) sharp cheddar cheese, grated
  • 1 tbsp butter
  • 4 eggs
  • 3 tbsp (45 ml) olive oil
  • 1 tbsp (15 ml) apple cider vinegar
  • 1 tbsp (15 ml) honey
  • 2 tsp (10 ml) whole-grain mustard
  • 6 cups (140 g) mesclun lettuce (see note)
  • 3 radishes, various colours, thinly sliced on a mandoline

Instructions

  1. In a pot over medium heat, melt the butter. Add the flour and cook for 1 minute while whisking. Add the milk. Bring to a boil while whisking constantly. Cook for another 2 minutes or until the mixture thickens. Remove from the heat.
  2. Add the cheese, egg yolk and nutmeg. Season with salt and pepper. Mix just until the cheese has melted.
