Air Fryer Crispy Goat Cheese Salad

Ingredients
- 2 tbsp unbleached all-purpose flour
- 2 eggs
- 3/4 cup (60 g) panko breadcrumbs
- 1 log ripened goat cheese, about 125 g, cut into 8 rounds (see note)
- 1 tbsp (15 ml) olive oil
- 1/3 cup (30 g) pecans
- 2 tbsp (30 ml) olive oil
- 2 tsp (10 ml) white balsamic vinegar or white wine vinegar
- 1 tsp (5 ml) honey, plus more for serving
- 4 cups (180 g) curly-leaf lettuce, torn
- 1 tbsp chives, finely chopped
Instructions
- Line the basket of an air fryer with parchment paper (see note).
- In a shallow dish, place the flour. Season with salt and pepper. In a second shallow dish, lightly beat the egg. In a third shallow dish, place the breadcrumbs.
- Dredge the goat cheese rounds in the flour, shaking of any excess. Dip into the beaten eggs, letting some of the excess drip off. Press into the breadcrumbs. Dip a second time into the beaten eggs, then into the breadcrumbs. Place on a plate.
- Using a pastry brush, coat the goat cheese with the oil on both sides.
- Place the goat cheese in the basket of the air fryer, evenly spaced out. Cook for 4 minutes at 375°F (190°C). Flip the goat cheese over and spread the pecans out in the basket around the cheese. Cook for another 4 minutes or until the goat cheese rounds are nicely browned.
- Remove the cheese and pecans from the basket. On a work surface, chop the pecans.
