Strawberry-Melon Bubble Tea
Ingredients
- 1/2 cup (125 ml) water
- 1/2 cup (105 g) sugar
- 1 cup (135 g) fresh or thawed frozen strawberries, sliced
- 1/4 cup (35 g) fresh or thawed frozen strawberries, sliced
- 1/4 cup (60 g) tapioca pearls, cooked and chilled (see note)
- 2 tbsp (30 ml) strawberry syrup, or more to taste
- 1/2 cup (125 ml) unsweetened homemade or store-bought green tea, cold (see note)
- 1/2 cup (125 ml) milk
- 1/4 cup (45 g) honeydew melon, peeled, seeded and cut into small dice
Instructions
- In a small pot, bring all of the ingredients to a boil. Simmer for 5 minutes.
- Place a sieve over a bowl. Strain the strawberry syrup through the sieve, pressing down on the strawberries with the back of a ladle to extract as much juice as possible. Compost the residue. Let cool. Cover and refrigerate until completely chilled, about 1 hour. The strawberry syrup will keep for 3 weeks in an airtight container in the refrigerator. You will obtain enough syrup to make 6 bubble teas.
