Beef and Caramelized Onion Toasts
Ingredients
- ½ cup (125 ml) sour cream
- 1 tbsp (15 ml) whole-grain mustard
- 1 tbsp dill, finely chopped
- 1 tsp (5 ml) prepared horseradish (optional)
- 1 lb (450 g) beef top sirloin steak, ¾ inch (2 cm) thick
- 2 tbsp (30 ml) olive oil
- 2 small red onions, thinly sliced
- ¼ cup (60 ml) water
- 4 slices country bread, each ¾ inch (2 cm) thick, toasted
- ¾ cup (20 g) arugula
- Sharp cheddar cheese shavings, to taste (see note)
Instructions
- In a bowl, whisk together the sour cream, mustard, dill and horseradish. Season with salt and pepper. Refrigerate.
- In a large skillet over medium-high heat, brown the meat in the oil for 2 minutes on each side for rare or just until the desired doneness. Season with salt and pepper. Set aside on a plate to rest for 5 minutes.
- Meanwhile, in the same skillet over medium-high heat, cook the onions until nicely caramelized, about 5 minutes. Add more oil as needed. Deglaze with the water and let reduce until dry, stirring with a wooden spoon.
- On a work surface, thinly slice the steak. Spread the sour cream mixture over the toasted bread. Top with the onions, steak and arugula. Season with pepper. Sprinkle with the cheddar cheese shavings. Delicious served with a bowl of soup.
