Apple and Sugar Fudge Pie

Ingredients

  • 2.2 lb (1 kg) Cortland apples, peeled, cored and cut into wedges ½ inch (1 cm) thick (about 7 apples)
  • ¼ cup (55 g) brown sugar
  • ½ cup (105 g) brown sugar
  • 1 tbsp cornstarch
  • 1 tbsp unbleached all-purpose flour
  • 1 egg
  • 1 cup (250 ml) 35% cream
  • ⅓ cup (75 ml) milk
  • 2 tbsp (30 ml) apple cider vinegar
  • 2 cups (300 g) unbleached all-purpose flour
  • ½ tsp baking powder
  • ½ tsp salt
  • ¾ cup (170 g) cold unsalted butter, diced
  • 1 egg, lightly beaten
  • 2 tsp sugar
  • 1 pinch ground cinnamon
  • 1 tbsp (15 ml) maple syrup

Instructions

  1. With the rack in the lowest position, preheat the oven to 400°F (200°C).
  2. On a non-stick or parchment paper-lined baking sheet, combine the apples and brown sugar. Bake for 15 minutes or until the apples are tender. Let cool for 15 minutes.
