Grilled Merguez with Herbed Tomatoes
Ingredients
- 1 lemon, zest finely grated
- 2 tbsp (30 ml) lemon juice
- 3 tbsp roasted pumpkin seeds, chopped
- 3 tbsp fresh Parmesan cheese, grated
- 3 tbsp (45 ml) olive oil
- 3 tbsp parsley, finely chopped
- 2 tbsp mint leaves, finely chopped
- 1 tbsp capers, drained and coarsely chopped
- 1 ½ lb (675 g) merguez sausages (about 12 to 14 sausages)
- 3 Lebanese cucumbers, cut into long slices
- 2 large tomatoes, various colours, sliced
- 1 yellow bell pepper, seeded and thinly sliced
- Parmesan cheese shavings, to taste
Instructions
- In a bowl, whisk together all of the ingredients. Set aside.
