Curry Omelette Sandwiches
Ingredients
- 1 red bell pepper, seeded and cut into rounds ½ inch (1 cm) thick
- 1 onion, cut into rounds ½ inch (1 cm)
- 1 tbsp (15 ml) olive oil
- 4 slices bacon, halved
- 10 eggs
- 2 tsp curry powder
- 2 tbsp butter
- 4 slices mozzarella cheese
- 4 brioche hamburger buns
- ¼ cup (60 ml) mayonnaise
- 8 slices smoked ham
- 2 cups (50 g) arugula
Instructions
- With the rack in the middle position, preheat the oven to 400°F (200°C).
- On a non-stick or parchment paper-lined baking sheet, toss the vegetables with the oil. Season with salt and pepper. Arrange the vegetables on one side of the baking sheet. Arrange the bacon on the other side of the baking sheet. Bake for 15 minutes or until the vegetables are tender and the bacon is crispy. Pat the vegetables and bacon dry with paper towels, as needed. Set aside.
- Meanwhile, in a bowl, whisk the eggs with 1 tsp of the curry powder. Season with salt and pepper.
- In a 10 ½-inch (27 cm) crepe pan over medium heat, melt one-quarter of the butter. Pour in one-quarter (½ cup/125 ml) of the egg mixture. Cook until the surface of the omelette is still slightly runny. Place 1 slice of cheese at the centre of the omelette. Fold two opposite sides of the omelette over the cheese, then fold over the other two sides to form a square. Set aside on a plate. Repeat with the remaining butter, egg mixture and cheese.
- In the same pan, toast the inside of the hamburger buns.
