Vegetarian “BLT” Sandwiches
This recipe for a faux BLT sandwich replaces traditional bacon with tofu bacon.
Ingredients
- 2 tbsp (30 ml) soy sauce or tamari
- 2 tbsp (30 ml) vegetable oil
- 1 tbsp brown sugar
- 1 ½ tsp smoked paprika
- 1 tsp onion powder
- ¾ lb (340 g) extra-firm tofu, cut lengthwise into 1/8-inch (3 mm) slices
- 8 white bread slices
- Mayonnaise, to taste
- 8 curly or Boston lettuce leaves
- 2 tomatoes, sliced
Instructions
- With the rack in the middle position, preheat the oven to 375°F (190°C). Line a baking sheet with a silicone mat or parchment paper.
- In a bowl, whisk together the soy sauce, oil, brown sugar and spices. Dip one piece of tofu at a time in the marinade and lay out on the prepared baking sheet. Set the marinade aside.
- Bake the tofu for 15 minutes. Remove from the oven. With a pastry brush, cover the tofu with the remaining marinade. Bake for another 5 minutes or until the sides are golden. Set aside at room temperature.
