Air Fryer Tofu Alla Parmigiana Sandwiches

This parmigiana-style sandwich includes crispy tofu slices, tomato sauce, mixed antipasto vegetables and arugula all piled into a kaiser roll. A perfect meal for lovers of vegetarian and Italian cuisines.

Ingredients

  • 1 lb (450 g) firm tofu
  • 2 tbsp cornstarch
  • ½ cup (40 g) panko breadcrumbs
  • ¼ cup (20 g) fresh Parmesan cheese, finely grated
  • 1 tsp dried oregano
  • 2 tbsp (30 ml) olive oil
  • ¾ cup (180 ml) store-bought tomato sauce with basil
  • 1 ½ cups (150 g) mozzarella cheese, grated
  • 4 kaiser rolls, halved horizontally
  • ½ cup (125 ml) store-bought antipasto (mixed marinated vegetables), drained
  • 2 cups (50 g) arugula

Instructions

  1. On a work surface, cut the block of tofu into 4 large slices. Pat the tofu slices very dry. Season with salt.
  2. In a shallow dish, place the cornstarch. In a second shallow dish, combine the breadcrumbs, Parmesan and oregano.
  3. Gently coat the tofu slices with the cornstarch.
  4. Pour the oil into the same dish. Press the tofu into the oil to soak in the cornstarch. Press the tofu into the breadcrumb mixture to coat well on both sides.
  5. Place the tofu in the basket of an air fryer. Cook for 20 minutes at 400°F (200°C).
  6. Remove the basket from the air fryer. Flip the tofu slices over. Top with the tomato sauce, about 3 tbsp (45 ml) per slice. Sprinkle with the cheese. Continue to cook for 5 minutes or until the cheese is melted and golden.
  7. Cover the inside of the kaiser rolls with the antipasto. Top the bottoms of the rolls with the tofu. Garnish with the arugula. Close the sandwiches with the tops of the rolls. Cut in half, if desired.
